Is there some way that I can test the PDF Form editing feature?

It doesn't seems to work in your demo app.

yes, demo project for ios has no UI or APP layer implement.
just aviable in API.

Before I buy the Premium license I have to make a proof of concept.

The scenario is:

An iPad app that can show a PDF and can do the following:

1. Form filling support for text fields and checkboxes.
2. Save the PDF and reopen it again for editing.
3. Flatten the PDF.
4. Mail the PDF.
